Kodiak Cakes Copy Cat

These protein pancakes are delicious, fluffy and easy to make.

Ingredients

  • 2 Cups Whole Wheat Flour
  • 1 Cup Oat Flour
  • 3 1/2 Cups Water
  • 1/2 Cup Plain Greek Yogurt
  • 1/2 Cup Milk
  • 1/3 Cup Olive Oil
  • 2 TBS Honey or Brown Sugar
  • 3/4 tsp Salt
  • 1 tsp Vanilla
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda

Optional

  • Vanilla Whey Protein Powder
  • 1/4-1/2 Cup Extra Water

Method

In a mixing bowl, combine the flour and water. Mix on low until all the flour is incorporated in water. Try your best to get out all of the lumps.

Add the rest of the ingredients and mix well. The batter should not be too thick. If it is, add a bit more water.

Heat your pan or skillet to medium low and add some olive oil.

Scoop desired amount onto your pan. Once the batter is bubbling, flip the pancake over. Cook for another minute or two, or until the bottom side is golden brown.

Serve with your favorite toppings and enjoy!

These pancakes are about to change the way you eat homemade pancakes. Not only are they super delicious, super easy, and super dope, they are also super wholesome! No white flour necessary thank you very much. My recipe made about 22 smaller pancakes, about 3″ in diameter. After putting that into a recipe generator and pushing a few buttons (boop boop boop), Viola! Each pancake has 3 grams of protein. I had 3 myself, so that gives me 9 grams of protein just from eating pancakes. Not too shabby! If you’re wanting even more protein, add in a bit of vanilla whey protein powder.

Easy.
Whole. Homemade.

My kids gobbled these up. Our favorite way, and I’m sure many peoples favorites, is adding bananas to the batter while they cook. Who doesn’t like banana pancakes? Heck, there’s even a song about it!

COMPLETE WHOLE FOOD FOR BREAKFAST. HOW IS THIS A BAD PLAN?

Because these pancakes are full of wholesome goodness, they also fill you up pretty fast and keep you full for a while. My kids and I ate them around 3:30 PM and didn’t even bother making dinner. A slice of toast before bed with some milk and we were good to go.
