Slow Cooker Sweet Chili

This slow cooker sweet chili gets gobbled down by my kids. It’s fast and delicious. All you have to do is dump the ingredients in and wait for dinner.

    Ingredients

    • 1 lb Uncooked Ground Beef
    • 1 Large Onion
    • 3 Cans Assorted Beans (I use pinto, black and kidney beans)
    • 2 - 15 oz Can Diced Tomatos
    • 1 - 4 oz Can Diced Green Chiles
    • 1 - 15 oz Can Tomato Sauce
    • 1 1/2 Cups Water
    • 2 TBS Chili Powder
    • 2 TBS Cumin
    • 2 TBS Salt
    • 2-4 TBS Brown Sugar
    • 1 TBS Pepper
    • 2 tsp Onion Powder
    • 2 tsp Garlic Powder
    • 2 tsp Oregano

    Optional Toppings

    • Sour Cream
    • Shredded Cheddar Cheese
    • Tortilla Chips/Fritos

    Method

    1

    Dice the onion and pour into the crock pot.

    Add in the uncooked ground beef. Break up the beef into smaller chunks with a flat spatula.

    Add all of the rest of the ingredients in a crock pot. Cook on high for 4 hrs or low for 6-8 hours.

    Taste before serving. Adjust salt and sugar if it needs to be more sweet or flavourful.

    Optional: Serve with a dollop of sour cream, a sprinkle of cheese and a side of chips.

    Slow Cooker Sweet Chili

    Is it just me, or do you find it pointless when you have to cook meat for a crock pot meal? Isn’t that the whole point of a crock pot meal? You dump everything in a pot and let it do it’s thing. Right? Well, this is definitely one of those recipes. No need to worry about browning up that meat. Just pour all the ingredients together, give it a few stirs, and a few hours later you’re good to go.

    Easy Fiber

    Fiber is something that I am trying to pay more attention to. Women need about 21-25 grams of fiber in a day. Men need about 30-38 grams. 1 cup of cooked pinto beans has about 15 grams of fiber. “We’re practically there”!  Even the Grinch can appreciate that this chili is packed with beans, which makes my goal of 25 grams a day a bit more attainable.

    BEANS THE MAGICAL FRUIT

    Buying beans in a can is ok, especially if you’re in a pinch. But, it’s much better and cheaper to buy dried beans and soak them. Also, they still add preservatives in cans of beans. All, except for black beans for some odd reason. Soaking beans isn’t difficult. I used to think it was the worst because my pot always boiled over, leaving a huge mess on my stovetop.
