Easy Asian Noodles

I have been playing around with ingredients to find that perfect noodle dish that satisfies all of my noodly cravings. This is it.

Ingredients

  • spaghetti noodles (enough for 2 people)
  • 1-2 chicken thighs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 TBS Sesame Oil
  • 1/2 C Frozen Peas
  • 1 Red Bell Pepper - Sliced
  • 1/2 C Shredded Carrots
  • 1/2 C chopped broccoli
  • 1 inch ginger peeled and roughly chopped
  • 2-3 Stalks of Green Onion
  • 1/4 C cilantro (including stems)

For The Sauce

  • 1/2 C fresh lime juice
  • 4 TBS soy sauce
  • 2 TBS hoisin sauce
  • 5 TBS dark Brown Sugar
  • 3 TBS peanut butter
  • 1 Inch Fresh Ginger or 1/2 tsp powdered ginger

Method

Fill up a pot of water and bring to a boil. Add in your noodles and cook as directed on package.

For the Sauce

While your noodles are cooking, add all of the sauce ingredients together and mix in a blender or bowl. Set aside.

For The Rest

Cut the chicken breast into small cubes or slices. Put in a pan on medium heat with a drizzle of oil.  Add a sprinkle of garlic powder, onion powder, salt and pepper. Cook until done.

Add the veggies to the chicken and cook until warmed through. I usually leave my broccoli warmed but not softened.

Bring it All Together

Once the veggies are warmed, add the noodles and then the sauce. Stir together and cook until incorporated – About 2 mins.

Top with cilantro and green onions and serve.

This dish warms my belly and makes me feel like a millionaire. Yes, it’s that good.

Easy Asian Noodles - Comes Together Quick!

These easy asian noodles really come together quickly. First, Boil your noodles. While your noodles are boiling. mix all of the sauce ingredients in a bowl or blender. Then, cook the chicken in a large work or pan. After your chicken is cooked, then throw the veggies in with the chicken. Cook them all together until it’s hot. (I like to leave my broccoli somewhat tough so just make sure to cut it into small pieces so it can cook up quickly). 

Finally, add in your noodles and sauce, cook for 2 minutes and done!

A Word About Noodles...Use what ya' got!

I’m using spaghetti noodles. This is obviously not an asian noodle, but it totally works! If you have ramen noodles feel free to use those. Soba noodles would be AMAZING with this! I’ve even tried a wide rice noodles with this recipe and it turned out super yummy! Basically, any noodle will do for this dish, so don’t sweat it.

These Easy Asian Noodles were created one late night out of desperate need to fill a massive noodle craving.

As I recall, my husband was out late with his mother that night catching a movie and I had been baking bread all day. This was part of a fun way to make a few extra bucks. Needless to say, I therefore ignored my needs and hadn’t fed myself well at all. Because of that I needed some serious sustenance but didn’t want to spend another hour cooking as it was already 9 pm. I also didn’t want something out of a box or can. I wanted homemade!

i needed some serious comfort food And for some reason that scene from "elf" kept coming into my mind.

You know, that one scene where Zooey Deschanel is sitting in her living room and she’s eating a bowl of noodles with her chopsticks while watching the news, all while Buddy the Elf is roaming around Central Park looking for Santa. 

Ever since watching that scene, a big bowl of noodles had seemed so cozy to me and I was now that girl in the living room needing a big bowl of noodles! 

I then scrambled to the kitchen and literally got whatever fixin’s were in my fridge and freezer. I had some already cooked up chicken from the night before. I became a frenzied chef excited about my new creation.

After I made up the noodles I took a big ol’ bite and bam! My stomach had never been happier and I’m telling you, these easy asian noodles warmed my soul. Warm, tangy, nutty noodles; they did everything I needed them to do that night. Finally when my husband got home I told him all about it these yummy new noodles. He let out a chuckle and said, “Wow, those noodles really meant something to you.”

Pardon my French but "Heck yes they did!"

Also, is it possible to think, “What’s the point of eating anything else!?” 

Needless to say, this is what I ate for the next few days, until I rediscovered sourdough bread. After eating a slice of that, it pretty much cured me from eating one meal for the rest of my life. BUT If I did only have one meal to eat the rest of my life, these easy asian noodles would be a contender.  Seriously delicious and incredibly easy.
