Easy Chocolate Covered Strawberries

This is such an easy recipe for Chocolate Covered Strawberries. No fumbling with double boilers, thermometers, or chocolatier skills needed.

Ingredients
- 1 lb Strawberries
- 12 Oz Milk, Dark Or Semi-Sweet Chocolate Chips
- 2.5 tsp Olive Oil (divided)
- 1/2 C White Chocolate Chips (optional)

Method
Melting The Chocolate
In a glass measuring cup or microwave-safe bowl, add the milk, dark or semi-sweet chocolate chips. Drizzle 2 tsp of olive oil over them and stir until all the chocolate chips are coated in oil.
Place them in the microwave and cook for 1 minute. Remove and stir, being sure to stir all of the chocolate chips.
Place your chocolate chips back into the microwave and cook for another 30 seconds. Stir completely, again being sure to stir the entire mixture. Repeat for 30 seconds one more time.
At this point, your chocolate should almost be fully melted. If there are still some chunks, place back in the microwave at 15-second intervals, stirring in between each cook. Repeat until chocolate is fully melted. NOTE: The chocolate will be somewhat thick.
Dipping The Strawberries
Place a piece of parchment paper on the counter top. Holding onto the green tops of your strawberries, dip them into the chocolate making sure to cover as much as you can. Remove from the chocolate and give it a few shakes to remove any excess chocolate.
Place the strawberries on the parchment and let dry fully. About an 1.5 hours. **You can speed this up by placing the strawberries in the fridge.
Optional White Chocolate Drizzle
In a microwave-safe bowl, combine the white chocolate chips with the 1/2 tsp of olive oil. Stir to combine and melt in the microwave starting at 30 second intervals and dropping down to 15 second intervals as the chips melt. Using a fork or a piping bag, drizzle the white chocolate over the strawberries. Allow to dry (about an hour, can refrigerate for faster dry time). Enjoy!
Leave on the counter for 2 days or in the fridge for 4-5 days.

Microwaving Chocolate | What Could Go Wrong?
For the most part, this recipe for Easy Chocolate Covered Strawberries is fairly easy and straightforward. There are however a few things to know about chocolate to make sure that this recipe is a success for you. The first thing is water. Yup, innocent, non-threatening water. Non-threatening that is unless you’re chocolate. Chocolate HATES water. It will instantly curdle when mixed together, which can really put a damper on this experience. Make sure that all of your tools and ingredients are bone dry. This includes those strawberries that you may have washed before hand.
Another possible problem to mention with this method of chocolate melting is burning the chocolate. Since we aren’t using a thermometer to measure your chocolate temperature, we are left to our sight and feel to determine doneness. If you over-microwave your chocolate, it will burn. This is why we don’t just blast your chocolate on high for 2 minutes. It’s important to microwave in small time intervals, stirring in between each cook. Stirring helps to evenly cook the chocolate, making sure the sides or bottom doesn’t burn. Be sure you’re scraping the bottom of your bowl to get all the chocolate mixed together.
The last thing that could go wrong with this method has to do with the bowl or cup you’re using to melt the chocolate in. Glass seems to be the best material to use, but plastic bowls are ok as well. Ceramic bowls and mugs however can be a hit or miss. I once microwaved some chocolate in a ceramic mug and completely burned the entire thing! The ceramic got too hot too fast and killed the entire batch.
Make Them Your Own
Have fun with this method. Feel free to dip your strawberries in the white chocolate and drizzle with regular chocolate. White chocolate chips use the same measurements to melt as the regular chocolate chips do. Add some sprinkles, nuts, food grade glitter or anything you’d like to the decorating process.
