Easy Delicious Spinach

Talk about the easiest side dish on the planet!

Ingredients
- Fresh Spinach (1/2 cup per person)
- 1/2 tsp Olive Oil (more or less)
- Pinch Of Salt
Method
In a large mixing bowl add in the desired amount of spinach, based on the number of people eating.
Drizzle with a little bit of olive oil. You don’t need that much here, just enough to cover the leaves. This amount will also depend on how many you’re feeding.
With clean hands, massage the olive oil into the spinach leaves until they are all incorporated in the oil.
Sprinkle lightly with salt and enjoy!
This side is so versatile! Try it with just about any dish to add an easy bit of green to your day.

This dish came to me during the exact scenario that I described above. Trying to get dinner on the table, only to realize I wasn’t quite done. I opened my fridge and there it stood. Humble, mellow spinach. I thought about cooking it up in a pan, but it get’s so wilted. Then brilliance slapped me in the face and said, “Heather, just serve it fresh”. Game changer people! My meals have never been the same. Life has never been so simple.
The great thing about this side dish is that it’s pretty dang versatile. You can have it with chicken and potatoes, in ramen noodles, throw them into a Buddha bowl, any noodle dish, I could go on for hours! But I won’t… The picture above is actually some butter chickpeas (my play on butter chicken), brown rice/quinoa mix, and some sautéed onions. So. Dang. Good.
*Pro tip: When I’m serving this to my kiddos I’ll cut it up into ribbons with my food scissors. They are way more likely to eat it this way.
