Easy Vitamins
The nutritional breakdown of this recipe was created by a website and app called Cronometer. It’s a great tool to see what’s in the food you consume, especially the vitamins and minerals which is the information that I’m most interested in. Most nutritional labels only tell you your macro’s like carbs, and very few vitamins and minerals. Basically this juice contains all your vitamin C and vitamin K recommendations for the day, 40% of your vitamin A, 36% Manganese, 38% Potassium. It’s high in calcium, folate, iron, vitamins B1, B2, B3, B5, B6, calcium, copper, magnesium, and phosphorus. That’s amazing!
Sometimes eating enough veggies and fruit in the day can be tricky, especially when life gets busy. I love that if I don’t get some greens in at lunch time because I’m feeling lazy or don’t want to cook that I can prepare a quick juice that is packed with nutrients.
It’s also a great tool to help my kids get in their veggies too. Let’s face it, even kids that are great eaters can have a hard time getting in all their veggies that they need in a day. Juice is versatile, simple, and concentrated. Not only that but it’s fast, especially when you’ve practiced it a bit. I made sure that the juicer I had was designed with a large opening to put my my fruits and veggies in because that meant less cutting which means less time.
It’s also extremely versatile. This recipe is merely a way to get your feet wet as well as an outline of juicing. Feel free to adjust any ingredients or just throw the whole thing out and start from scratch making your own. If you’re making it for kids feel free to make it a little bit sweeter. My kids prefer the sweeter juices, but adding in celery and kale go mostly unnoticed, at least in taste.
