Sourdough Waffles

Sourdough Waffles are so much nicer on your guts than regular waffles. They are light, crispy and soooo tasty!

    Ingredients

    8-12 Hours/The NIght Before

    • 1/2 Cup Sourdough Start
    • 5 Cups Flour (I usually do 4 cups white flour and 1 cup wheat)
    • 3-1/2 C Water

    The Rest of The Ingredients

    • 1/2 Cup Milk
    • 2 Eggs
    • 2 TBS Brown Sugar or Honey
    • 1 tsp Vanilla
    • 1/4 C Olive Oil
    • 1 tsp Salt
    • 1 tsp Baking Powder
    • 1/2 tsp Baking Soda

    Method

    8-12 Hours/The Night Before

    Mix the sourdough start, flour and water together. Add the water gradually while you mix, until you create a batter like consistency. Cover and let sit for at least 8 hours, or over night. Heat up your waffle iron.

    8-12 Hours Later/The Morning

    The mixture should be bubbly and smell yeasty. BEFORE YOU MIX IN THE OTHER INGREDIENTS: Take out 1/2 Cup of the mix. Store this in the fridge, and keep it until next time.

    Mix the rest of the ingredients until combined.

    Cook and serve with your favorite toppings. 

    When using your sourdough start, you may see a grey liquid form on the top. This is ok and ready to use! If the liquid ever turns pink, then throw it away. If it’s grey, let it stay. If it’s pink, down the sink! Your start can last anywhere from 1-3 months. Enjoy!

    Sourdough Waffles are one of THE BEST WAYS to use your sourdough starter. They are light, fluffy, crispy and easy on the guts. It’s also such an easy way to use your sourdough starter to keep it fresh and thriving as there’s really nothing technical about this recipe. Dump, mix, wait, dump, mix, eat! Let’s get into it.

    8-12 Hours/The Night BEfore

    8-12 Hours/The Night Before, you’re going to take 1/2 a cup of sourdough starter and add it to flour and water. I like to use mostly white flour with a little wheat – Hence, 3 cups of white flour and 1 cup of wheat flour in my recipe. However, this recipe is pretty flexible when it comes to your white and wheat flour ratios. If you want to increase your wheat flour and reduce your white, go for it!

    Once everything is mixed together, cover it with a lid or saran wrap, and let it sit. This is where the sourdough magic begins!

    8-12 Hours Later/The Next Morning

    The next morning your mixture should smell nice and sour. It should also be bubbly! These are great signs that everything is working right. Before you add any ingredients into your frothy bowl of fermented batter, remove some starter (about a half a cup), and store it in your fridge for the next time you need to use it.

    Once your fresh starter is safely stored away for it’s next use, time to start dumping in the rest of the ingredients! If the mixture seems too thick, feel free to add a bit more milk to thin it out. I don’t like my mixture too thick as the waffles can be dense, but too thin can also ruin these. I like it about the same consistency as pancake batter.

    Awesome Healthy Topping/Addition Ideas

    It sometimes seems silly to try and make waffles so healthy when what you put on top can be not so healthy. Here’s an awesome list of some possible healthy toppings!

    1. Fresh Cranberries and Bananas – This is one of my FAVORITE batter additions to these sourdough waffles. You can find fresh whole cranberries in the produce section of most grocery stores, especially around the holidays. Simply chop them up, dice up a banana as well, and throw them both in the batter before cooking. The combination between tart and sweet is incredible!
    2. Whipped Cream – I’m not talking about cool whip, but actual whipped cream in a can. This is the real stuff! It’s light, creamy, fluffy, and is relatively low in calories. Top with bananas, bluberries, strawberries and some fresh mint leaves. Be brave and eat the mint leaves, they’re so good!
    3. Homemade 3 Ingredient Berry Syrup – This is a recipe of mine that’s super tasty and very healthy! It’s a homemade berry syrup made with only the good stuff! It’s incredibly easy to make too. Click here for the recipe. 
    4. Sour Cream and Honey – This may seem like an odd one, but it’s surprisingly good! The sour cream is zesty and creamy, and the honey sweetens it up nicely. The sour cream is also delicious with the 3 Ingredient Berry syrup as well.
