Lazy Omelette

Eat more veggies! This is such a great and easy way to get in more vegetables during breakfast time. Get creative and use what’s in season. Or don’t get creative and use what I’ve done. Either way, it will be delicious and nutritious.

Ingredients

The Toppings

  • 1/2 Zucchini
  • 1/4 Onion
  • 1/2 Red Bell Pepper
  • 1/2 Tomato
  • 2 Slices of Ham (optional)
  • Pinch of Basil (fresh is best but dry is great)
  • Pinch of Oregano
  • 2 Minced Garlic Cloves
  • 1 tsp Vinegar (I like to use Balsamic, Apple Cider Vinegar, or Sushi/Rice Vinegar)
  • Salt and Pepper to taste
  • 1 TBS Olive Oil
  • Shredded Cheese ( I like cheddar or parmesan)

The Eggs

  • 4 Large Eggs
  • Salt and Pepper to taste
  • 1 TBS Olive Oil

Method

Preparing toppings

Dice up all the vegetables into small cubes and set aside.

In a small skillet on medium high heat, add olive oil, onion, garlic, ham (if using) and red bell pepper. Cook for 2-3 minutes, stirring only occasionally.

Add in the rest of the veggies and spices, as well as the vinegar and cook on high for 2-4 minutes. I like my veggies to still have some crisp to them, so I usually don’t cook them down very much.

Add a dash or salt and pepper to taste.

remove skillet from the heat and set aside.

Scramble the eggs and season them with a pinch of salt and pepper.

In a larger skillet add the olive oil on high heat.

Once the oil is hot, add the scrambled egg mixture and cook until the eggs are done.

Divide the eggs evenly onto small plates. Top them with the veggie medley and sprinkle with cheese. 

Sometimes eating veggies for breakfast is hard.

It’s difficult to think about where to apply them. I can’t have onion beet jam on my bran muffin (because I just so happen to have loads of onion beet jam laying around). Or radish and carrot salsa on my waffles. Try eating carrot soup for breakfast…hard pass. 

This application was actually a no brainer for me. Omelettes are amazing, we all know that. But sometimes they are a pain to flip it right to get that perfect circle. I kept running into the problem of too much filling spewing out. I would try and stuff those things so full, that it would turn out to be this huge fight to try and keep it all together. But don’t worry, we didn’t break up, we came to a compromise, where we both are happier for it. Yes, eggs have feelings too. And this recipe helps us both to live up to our true potential.

Easiest. Omelette. Ever.

The other nice thing about this is that it's so versitle! Who doesn't like options?

If you don’t like the list of vegetables that I’ve used, sub them out and use your favorites. If you are one of those people that like to cook in season, go for it! Add in different spices and really make it your own. Try to venture out to more exotic cheeses. Instead of vinegar, try a splash of lime. Get those creative juices flowing and create your perfect omelette. 

I love eating this with a side a grapefruit and some tea. Sometimes I’ll even add a slice of homemade whole wheat toast. This lasts me until lunch without feeling like I need something before then and it makes my stomach feel settled and happy. 

It's such a perfect balance to get you started on tackling the day.
