Easy Homemade Chicken Noodle Soup

    Ingredients

    • 2 TBS Olive Oil
    • 3 Large Carrots
    • 2 Celery Sticks
    • 1 Onion
    • 3 Cloves Garlic
    • 1 Large Chicken Breast OR 4 Tenders
    • 1 tsp Poultry Seasoning
    • 2 Quarts Chicken Stock
    • 6 oz Large Egg Noodles
    • Salt to taste
    • Pepper to taste

    Method

    Preparing the spices

    In a large pot, add in olive oil, and heat to medium high.

    Peel and slice the carrots, celery and onion into small bite sized pieces

    Dice the chicken into small cubes.

    Add the carrots, celery, onion, chicken and poultry seasoning into heated pot. Sprinkle about 1/2 tsp of salt over the vegetables and chicken.

    Cook until the chicken is cooked through (approx 5 minutes) stirring occasionally

    Add the chicken stock and bring to a boil. Once boiling, turn stovetop temp down to a simmer and cover pot with a lid. Cook until carrots and celery are soft. Approx 15 minutes.

    Once the carrots and celery are soft, add the noodles and cook as directed on package.

    When noodles are cooked, add in salt and pepper to taste.

    Easy HOmemade Chicken Noodle Soup

    As a little girl my mom would make homemade chicken noodle soup in the winter times for us kiddos. She was a master at making her own homemade noodles in minutes. It was comforting and delicious! 

    Since we’re trying to make this as easy as possible, instead of making our own noodles we’ll use a great substitute, egg noodles! This super easy homemade chicken noodle soup will have you wondering why you’ve waited so long to ditch the canned stuff! With a few ingredients you’ll be able to whip up a wholesome meal for the whole crew. This timeless classic delivers on comfort and taste, and is easily a staple in our home once the weather cools down.

    First, you’ll want to fire up the stove top and get some oil heated up in a pan. Put the stove top on medium high so as not to burn the oil while you’re preparing your chicken and vegetables. 

    Pro Tip: You’ll want to heat up your oil before adding in the ingredients. This helps to quicken the cooking process and makes the heat distribute through your food more evenly.

    While your oil is heating, first peel your carrots and cut up your vegetables. I like to cut the carrots into circles because it’s quick and pleasing to the eye. Remember, we eat with our eyes first! 

    Pro Tip: When cooking with chicken, cut up the vegetables first. That way I only have to use one knife and one cutting board and I don’t need to clean my knife before cutting anything else. Next, cut the chicken into small cubes. I like to go about half the size of “bite sized”. 

    Once all the veggies and chicken are cut up, add them to the pot with hot oil. They should instantly sizzle. You’ll want to then add the poultry seasoning and salt to help develop those herby flavors. Cook together until the chicken is cooked through. Also, you don’t need to stir too often at this point. It’s good to let the chicken, veggies and spices rest in the hot oil as it will help develop flavors and give the chicken a nice browning.

    Pro Tip: When cooking any dish, try cooking your herbs and spices with oil before adding liquid. This is a GREAT way to bring out their flavors and will really enhance your dishes. 

    After the chicken is cooked through, pour in your chicken stock. Bring this to a boil and cover the pot with a lid. Let it simmer on low for about 15 minutes or until the carrots and celery are soft. You’ll want to wait to add the noodles until after the veggies have softened. This is because the longer noodles cook, the more liquid they absorb and the soggier they become. For example, if the carrots take 15 minutes to soften, but your noodles only take 7 minutes to cook, the noodles could turn into a mushy unpleasing texture.

    After the carrots and celery are softened, add in the egg noodles and cook as directed on the package. Finally, once the noodles are done, you’ll want to salt and pepper your soup to taste. Add in about a tsp of salt and pepper, stir and try it out. If it’s a bit blah, add in a bit more salt. Keep adding until the soup is hearty and delicious! This easy homemade chicken noodle soup is great on it’s own but to pizazz it up, enjoy this soup with a side of buttered crusty bread and a salad. Enjoy!
