10 Minute Vegan Chili

Ingredients

  • 2 Cups Cooked Beans - I prefer a mix of pinto and red
  • 1/2 Onion
  • 1/2 TBS Olive Oil
  • 2 TBS Tomato Paste
  • 1/2 C Water
  • 1 Can Diced Green Chiles
  • 1 1/2 tsp Chili Powder
  • 1 1/2 tsp Cumin
  • 1 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 TBS Packed Brown Sugar or Honey

Method

Dice a half an onion into small pieces and put them into a pot.

Drizzle the olive oil on top and let cook on medium high until softened. About 3 minutes

Then add the tomato paste and water. Stir all together until the paste is smooth and incorporated. About 1 min.

Then add the rest of the ingredients.

Taste and adjust the salt or sweetness levels.

Suggested toppings: Cheese and sour cream are a must with chili. If staying vegan eat as is or with vegan sour cream. Feel free to squirt some lime juice over the top of your personal bowl to brighten it up a bit.

Ok, it’s go time and you’ve only got 10 minutes. What they heck are you going to make? You’re tired of the PBJ’s and you don’t just want to go out and get a burger from a cheap fast food place. What do you do? How about opening up that can of beans in your cupboard for a change. Beans are pretty amazing after all. Did you know that beans are high in protein, and fiber? Ok yeah you probably knew that. But did you also know that beans contain folate, magnesium, and iron. They are also high in polyphenols which is an antioxidant. What?! This 10 Minute Vegan Chili packs a nutritional punch as well as quickly comes together.

Not to mention there is no prep for this amazing source or nutrients as it already comes ready to go. There’s no thawing, no grilling, no sautéing. It just has to be warmed and seasoned up a bit. No fuss no muss! One of the reasons why I love this meal is that A – my kids will eat it, 2- It tastes delicious, III – It’s nutrient dense and filling. It also pairs really well with a whole ton of different veggies and fruit. Your grains can be diverse as well. We love pita bread to dip, chips, rice is amazing to have it topped with, or toast.

This is also a great choice for a work or school lunch. Make it the morning or or the night before. Pop it into the microwave if it’s cold, put it in your thermos and bango! So much better than the processed options outside of the home.

Great options if you're vegan or a meat eater

The seasoning in this dish are so hearty and meaty tasting that you don’t even miss the ground beef. Whether you’re vegan or a meat eater, you’ll be satiated by this dish no problem. The fiber makes it super filling so a little goes a long way, and the flavor is sweet and salty. I love a good sweet chili, and I hope you do too. If not, omit the sugar or honey and add a bit less salt, tasting as you go to adjust if it needs more.

Who said it takes 30 or more minutes to make a great meal!?

That’s faster than putting frozen chicken nuggets onto a pan and cooking them. If you flip your nuggets, I’d argue that it’s less effort too! Not to mention waaaaaaaay cheaper than chicken nuggets. This is actually one of my favorite things about cooking and eating less meat at meal times. Your cooking time usually get cut in half. It’s empowering to cook amazing meals for my family that I’m not slaving away for an hour to cook. Not that there’s anything wrong with this or that you shouldn’t do that, it’s just nice to have a break. And not to get all vegan on you, but you don’t have to worry too terribly much about what they fed your beans or how they treated them. Win, win win! Thank you Michael Scott, master mediator.
