Mandarin Orange Salad & Sesame Dressing

Hello easy salad recipe! This Mandarin Orange Salad also has an easy homemade, healthy sesame salad dressing recipe to go with it.

    Ingredients

    Mandarin Orange Salad

    • 3 Cups Mixed Salad Greens
    • 1/4-1/2 Bunch Cilantro
    • 1/4-1/2 Cucumber
    • 1/4 Cup Red Onion
    • 2-3 Mandarin Oranges
    • 3 TBS Pepitas (Pumpkin Seeds)
    • 1/4 -1/2 C Sliced Rotisserie Chicken or Cooked Chicken
    • 1/4 C Feta Cheese

    Easy Sesame Dressing

    • 1/2 C Tahini OR Peanut Butter
    • 1/2 C Fresh Lime Juice OR Rice Vinegar
    • 3 TBS Honey
    • 2 - 1/4 tsp Salt
    • 2 TBS Sesame Oil
    • 4 TBS Water (more if mixture is too thick)
    • 2 TBS Sesame Seeds

    Method

    Mandarin Orange Salad

    1

    In a large salad bowl, add the mixed salad greens. Rough chop your cilantro and add to the greens.

    Slice your cucumber in bite sized chunks. Thinly slice your red onion in half moons. Add to the greens.

    Peel your mandarin oranges. Leave whole or slice in half. Add to greens. Add in your pepitas, chicken and feta cheese.

    Easy Sesame Dressing

    In a blender, food processor or bowl, combine the tahini, lime juice, honey, salt, sesame oil and water. Blend/stir to combine. Pour into a mason jar or desired container

    Heat a small pan on medium heat. Add the sesame seeds. Stir continually until the seeds turn to a golden color.

    Remove the seeds from the heat and immediately add it to the tahini mixture and stir. Top desired amount on top of Mandarin Orange Salad. Serve Immediately.

    Spring Mix Greens
    Cilantro
    Cucumbers

    First off, let’s talk greens. I LOVE using mixed greens on this. They are tender and buttery but still have some bite. Not as much bite as Romaine however. My hubby LOVES Romaine for that very reason. If you’re one of those, feel free to swap out the greens for your favorites. This recipe will be fine with any you like!

    Red Onions

    Let’s talk red onions. Red onions are very strong. They can enhance your salad, or they can totally overpower it. Make sure that you’re slicing your red onions AS THIN as possible. I cannot stress this enough. Paper thin is the goal. If you do this, you’ll get a great blend of red onions in your salad.

    Sesame Dressing

    Chicken, it’s what’s for dinner….or is that beef? Regardless! Chicken in this salad makes it a meal. You can omit the chicken if you’re wanting this more as a side. That being said, if you’re adding chicken to this meal, you can make it easy on you by getting a pre-cooked rotisserie chicken and carving off a slice or so. Sometimes I have some pre-cooked chicken that’s usually seasoned with salt, pepper, onion powder and garlic powder laying around, so I’ll throw that in. Either way, you do you!

    Lastly, let’s talk dressing. My favorite dressing to eat with this salad is my homemade Easy Sesame Dressing. It’s got a rich sesame flavor with a sweet and zesty zip that’s super refreshing. It’s healthy and made with whole food ingredients for you whole food lovers. Enjoy!
