Ingredients

For the Crumble

  • 1 Cup Rolled Oats
  • 1/2 Cup Dates
  • 1/2 tsp Salt
  • 1 TBS Butter or Coconut Oil
  • 1 tsp Vanilla Extract
  • 2 TBS Maple Syrup Or Honey

The Berries

  • 2 Cups Frozen Berry Mix
  • 1 TBS Maple Syrup or Honey

Method

Prepare The Crumble

Preheat the oven to 350 Degrees F.

In a blender or food processor, add in the oats, dates and salt. Blend on high until it resembles a fine crumble

In a bowl, empty out the crumble mixture and add the butter/coconut oil, vanilla and syrup/honey. Mix until combined. You may need to use your fingers to integrate well.

In your baking dish add the berries. Drizzle the top with maple syrup or honey.

Add the crumble to the top.

Bake for 35 minutes.

Serve hot plain or with half and half, plant milk, or Healthy Banana Ice Cream

What’s better than a warm bowl of cobbler?! How about a bowl that tastes just as good as good but is much better for you. Do we live in a world where such an opportunity exists!? Yes, yes

we do. You truly can have your cake and eat it too with this dish. Fun fact about frozen fruits and veggies. They actually contain more nutrients than fresh. What?! I know, but what happens is most the time the fruit and veggies are picked at peak ripeness and frozen quickly after it has been harvested. Leaving you with a great nutritional product. Go figure! The only downside of frozen things is sometimes thawed out they aren’t the best. Not these berries though, especially in this recipe.

Cobbler just so happens to be one of my favorite desserts but I hardly ever make it. Most the time it’s because the recipes I look for make the crumble top too cake-y. Not my cup of tea. I love a crumble crust and that’s what you’ve got here!

Traditionally crumble crust is made with white flour. This obviously is not the healthiest option, although delicious. I wanted to create something that was just as delicious but contained a nutritional punch. Ergo, oat flour. Most people, including myself, don’t buy oat flour. It’s too expensive and why when you can make it yourself for so cheap. Blend those suckers up! You can use quick oats or old fashioned rolled oats, (that’s what I used).

In a blender or food processor add in your oats, dates and salt. Blend until the mixture turns into a crumbly mixture. This takes about 1-2 minutes.

Add in the butter or coconut oil, vanilla extract, and maple syrup or honey. Using either a spatula, a pastry cutter or your fingers, incorporate all the ingredients so that the butter is well distributed. I find the best thing to do is use a spatula for a bit and then finish up the mixture with your fingers. The crumble should resemble a wet sandy texture.

Add in your frozen berries to a bake safe dish. Drizzle maple syrup or honey over the berries. Top with the crumble and bake for 35 minutes at 350 degrees F. 

Your cobbler should be golden brown on the top and the berries should be warmed and bubbling. This cobbler is so good eaten on it’s own, but if you want a bit more pizzaz then you can add half and half, coconut milk, or some easy Healthy Banana Vanilla Ice Cream because cobbler, as we know, pairs best with ice cream.
