Mountain Man Breakfast

Hearty, filling and made with whole food ingredients. This is one of my favorite breakfasts!

    Ingredients

    • 1 TBS Baking Soda
    • 3 Russet Potatoes
    • 2 TBS Olive Oil
    • 2 TBS Butter
    • 8 Large Eggs
    • 1 lb Ground Pork Sausage
    • 1 Cup Shredded Cheddar Cheese Blend
    • Salt
    • Pepper

    Method

    Boil Potatoes

    Preheat the oven to 425 Degrees F. Fill a large pot with water, enough to cover your potatoes. Turn heat on high and bring to a boil.

    While your pot is warming up, wash and cut your potatoes into bite sized pieces. Once your water is boiling, add the baking soda and potatoes. Boil on high for 8 minutes, or until the potatoes are just starting to soften.

    While your potatoes are boiling, take a 9X13 baking dish and add the olive oil and butter. Place the dish into your oven for 2 minutes, to melt the butter. Remove and set a side.

    Drain your potatoes and give them a few tosses to scuff them up a bit. Add them to the prepared 9X13 baking dish. Sprinkle with salt, about 1/2 tsp. Mix the potatoes with the oils, then, spread the potatoes evenly in the pan. Place in the oven and bake for 45 minutes, stirring the potatoes halfway through.

    While your potatoes are baking, cook your sausage as directed on the package. remove the sausage with a slotted spoon and place into a small bowl, leaving about a tablespoon of grease in the pan to cook the eggs with. Set aside.

    In a bowl, add your eggs, a few pinches of salt and cracks of pepper. Scramble with a fork. Cook on medium high in the pork grease, continuing to move eggs with a spatula until fully cooked. Remove from the heat and set aside.

    Once your potatoes are browned, add in your sausage and eggs. Stir to combine. Top with cheese. Place back into the oven for 5 minutes or until the cheese is melted. 

    This is great topped with salsa or ketchup. Eat hearty!

    Mountain Man Breakfast is such a hearty and filling breakfast. It’s full of whole food ingredients that fill up your belly for hours. Whenever I eat this breakfast I’m always surprised at how satiated I feel for hours afterwards. Not only that, but it’s pretty delicious too. This recipe is super easy, stores well in the fridge and is great for breakfast and brunch! Most of the time you’re waiting for the potatoes to cook. Let’s get into it!

    ParBoiling The Potatoes

    The most magical thing about this meal are the potatoes. They are crispy on the outside, and fluffy in the middle. Can we ask more from the humble potato!? To achieve this, we must parboil the potatoes (instead of fully boiling them), coat them in oil, and then bake them. Parboiling cooks the potato just long enough for it to start to get soft. Try not to cook them past this point, otherwise the potatoes can turn to mush.

    So why Baking Soda? Baking soda helps to create a better crust on the outside of the potato. This creates a better crunch, and a better crunch creates a happier me. You can however parboil without the baking soda and your potatoes will still be pretty good. After your parboil is done, place the potatoes in the 9X13 pan, give them a good toss in the melted butter and olive oil, and put them in the oven for a good 30 minutes or so. Try your best to make sure the potatoes aren’t piled up on top of each other, but spread out as much as possible.

    Putting it all together

    The rest of this recipe is fairly straight forward. Make scrambled eggs and cook up the ground sausage. Set them aside until the potatoes are cooked. If you’re worried about the eggs being overcooked while they wait, you can do a few things to prevent this. You can undercook them so they are a bit sweaty, or, you can remove them from the pan they’re in and place them in a bowl. This will help to stop the cooking process.

    Once your potatoes are golden and delicious, add the eggs and sausage. Mix them all together until they are fully incorporated. Top with your shredded cheese and bake for about 5 more minutes, or until your cheese is melted.

    This Mountain Man Breakfast is great served immediately and refrigerates well. It’s also a great brunch item for those of you who brunch. It’s great on it’s own, but even better topped with fresh salsa or ketchup. Enjoy!
