Salmon Lox ON TOast - Fancy with Ease

This Salmon Lox On Toast is one of my favorite meals/snacks/appetizers because it truly can be all of those things. You need a snack, toast this up. You need an entree to go along with those green beans or a simple side salad? Done. Going to a party and need a last minute offering to bring? Cut the toast into bite sized pieces and prepare to dazzle those with you. The greatest part is that this dish looks so fancy and tastes so delicious that is looks like you did a lot of work.

But oh, we know better, don’t we. This amazing dish only takes 5 minutes to make, 5! And that includes prep time. Also, it doesn’t take a lot of skill or know how to be delicious. If you can toast some bread, you got this. The other great benefit is that not only is this super healthy for you, but it’s ridiculously delicious. I can’t eat enough of this, which is why I buy the salmon in bulk at Costco as it’s a very good price for how much you get. If you don’t have a Costco near you or you don’t want to buy that much, then don’t worry! There’s usually smoked salmon in your local grocery store by the deli. If you can’t find some just ask around.

Now the salmon can get a bit pricey, but the other ingredients are so cheap that it balances the cost of this meal out very well. Price is actually one more reason I like to go with bulk stores like Costco or Sam’s Club because it’s significantly cheaper. This is a great thing to remember if you are in fact going to serve this dish to a lot of guests. This actually happened to me when I was at my sisters. She lives in a small town and I was visiting her for the holidays with family. I brought some salmon of my own to make this appetizer for everyone to share. I had previously eaten a few myself but I thought it would be enough. I grossly misjudged how much people would eat of this. I ran to her local store and paid twice the amount that I would have paid if I had brought more in the first place. Lesson learned!

So let’s put it together! Take some of your favorite artisan bread and pop it into the toaster until it’s crunchy but not too tough or dry. After it’s done, take it out and place it on a cutting board for assembly. First spread on the cream cheese, or cheese of your choice. Some great other cheese options are Boursin, Laughing Cow Cheese wedges or Neufchatel cheese. Then top the cheese with sprouts of your choice. I love sprouts because they are tender little leaves that pack a nutritional punch. You can grown them yourself or you can find them in the produce section. The type of sprouts I used here are kale sprouts. I love kale sprouts because they are mild in flavor and are very beautiful for presentation purposes. Next I sliced some red onions very thinly, the thinner the better. The onions are meant to just be a small bite of flavor so be careful not to slice them too thick. After that I load mine up with dill leaves. I love the flavor of dill. It’s a fresh, mildly sour and sharp flavor, at least it seems like it. Maybe it’s a mental thing because in my mind it’s always paired with pickles. Ha! After that I gently place the salmon on, taking care not to tear it…too much. If you’re new to smoked salmon and are worried about cooking it, don’t! Don’t worry and don’t cook it. It’s ready to eat as is and is safe to eat as well. That’s one of the blissful things about this meal is there is no cooking involved. After the salmon take one part honey and one part mustard to create a sauce to drizzle over the top. This is the icing on the cake. You’ve just completed this lovely dish, but you’ll notice that without the honey mustard, it’s lacking something. It needs that acidic and sweet kick to just push it over the edge of flavor and delight.

    Mix it up

The main ingredients of this Salmon Lox On Toast is the bread, cheese and salmon. This is a concept, an idea. Feel free to get creative and mix it up a bit by swapping out the toppings. If you don’t like honey mustard, how about a balsamic glaze? Or what about some capers or green olives? Maybe some basil instead of dill? How about smoked gouda or brie? I usually go for just a simple white loaf for the bread, but what about an onion sesame loaf? How about crackers instead of toast!? Then you just took out another cooking element and made this dish that much easier. My favorite combination is what you see here: sprouts, red onion, dill, cream cheese, salmon and honey mustard. The dill is magical and elevates this dish to the next level and is highly recommended by me. But don’t take my word for it, give this a try yourself and let me know what you think in the comments.
