Quick Kale

This Quick Kale Recipe is such an easy side dish for any meal. It’s great for breakfast, lunch and dinner, saves well in the fridge, and is great hot or cold.

    Ingredients

    • 1 TBS Olive Oil
    • 2 Large Bunches of Kale, (approx 8 cups)
    • 5 Fresh Garlic Cloves
    • 1/2 tsp Black Ground Pepper
    • 1/2 tsp Garlic Powder
    • 1/2 tsp Onion Powder
    • Salt to taste
    • 1/2 C Water
    • 1/4 - 1/2 a Fresh Lemon

    Method

    Prep your kale by washing, removing the center stem and cutting it into bit sized chunks. Mince your garlic.

    In a large sauté pan, add in your olive oil and turn on the heat to high. When your oil is hot, add in your kale, garlic, salt, pepper, garlic powder and onion powder. Stir together until combined and cook for one minute, stirring constantly.

    Pour in your water to create steam. Cook until the kale starts to shrink and wilt (about 2-3 minutes), stir occasionally. Remove from heat.

    Finish by squeezing the lemon juice over the greens. Start with 1/4 of a the lemon, toss together and taste. Add more lemon or salt if needed. Serve!

    Enjoy for breakfast, lunch, or dinner!

    If you’re looking for a quick, easy and satisfying side vegetable to go with your meal, this is the recipe for you! This Quick Kale recipe only takes about 5 minutes of cooking time and goes with most dishes. The kale is cooked just enough to still have a bite to it which gives it a great texture.

    Quick Kale

    Before you begin cooking, the first thing to do is to make sure you remove the stem that goes down the center of your kale. I go back and forth between the bagged kale and the full sized kale stalks. Either way, just be sure you’re putting in a little time to make sure these are fully removed. If not, you’ll basically be eating tree bark….ok maybe not that bad but trust me on this, you’ll want this removed.

    After all of your stems are removed, prep all the rest of your ingredients. Dice up your garlic cloves and cut your lemon in half. If your using kale from the bulk section, cut up your leaves in small bite sized slices. In a hot pan, add your oil, kale, salt, pepper, garlic powder, onion powder and garlic. Cook on high for 1 minute. Add in your water and steam for another 3-4 minutes. Lastly, turn off the heat, and squirt your fresh lemon over the mix evenly. Give it one more toss and eat!

    Since kale is hearty and we aren’t cooking it until it’s super soft, it will last in the fridge for a few days. This is great for leftovers and is also awesome for lunch or meal prep. Did I mention it’s also good hot or cold? Yup! Hey, there’s nothing wrong with baby carrots and salad for your veggies at lunch, but it’s nice to have a break too. This Quick Kale is perfect for that.

    I love making this Quick Kale for any meal. Yes, even breakfast! Slap this next to some toast and eggs. It comes together so quickly, takes little effort to create and it goes with just about anything. My favorite thing to eat this with is grilled chicken and a side of rice.
